Zesty Lime, Shrimp and Avocado Salad



I made this salad today and let me tell you, it is good!

I made a few modifications when I was making mine and didn't use any of the measurements as I am one person and the recipe is for four people.

Zesty Lime Shrimp and Avocado Salad
Servings: 4 • Serving Size: 7/8 cup
Calories: 210.4 • Fat: 9.2 g • Protein: 25.1 g • Carb: 7.8 g • Fiber: 3.6 g • Sugar: 0.6

  • 1 lb jumbo cooked shrimp, peeled and deveined, chopped*
  • 1 medium tomato, diced
  • 1 avocado, diced
  • 1 jalapeno, seeds removed, diced fine (I didn't use the Jalapeno as I am not a fan of heat, and a wuss when it comes to handling hot peppers)
  • 1/4 cup chopped red onion
  • 1 mango, chopped (I added this for more summer flavour)
  • Romaine lettuce (I plated mine on top of the lettuce to make it more salad like, less ceviche like)
  • 2 limes, juice of
  • 1 tsp olive oil
  • 1 tbsp chopped cilantro
  • salt and fresh pepper to taste

In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.


In a large bowl combine chopped shrimp, avocado, tomato, jalapeƱo. Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste. Plate on ripped romaine lettuce.

It makes a great summer salad and it didn't take a lot of time to make, another bonus when you would rather be outside in the sun!

Gluten Free Pancakes!

YOU HAVE TO TRY THESE!

Ok so for those of you who don't know in October I was diagnosed as Celiac. A quick explanation: Celiac means I have an auto immune disease and ANY gluten in my body as life long side effects. If I was intolerant I could eat gluten and I would feel sick but there would be any last effect, where as Celiac means that if you eat it you can have serious health issues. For my day to day life it means that it has changed EVERYTHING about how I eat, and drink. I have been googling and pinning and reading new cookbooks and researching left, right, and center. This morning I finally got around to making these blueberry "pancakes". They are FANTASTIC! There is only 3 ingredients  they are good for you and taste just like flour pancakes! I will be making them over, and over again!


Now I know what your thinking so what are they made of? One banana, one egg and the blueberries. THAT'S IT!

You mash up a banana, add an egg, mix, put in pan, sprinkle with blueberries, brown on both side and serve up with a little syrup. So good. I think I would add some flax next time to add a little fibre but they are so good.

Cambie Drinks

Tuesday night I headed out with Frazer to meet up with a few friends for a casual drink at The Cambie. Turn into a mini Cactus Robson reunion. Here is what I wore:

These pants were an amazing find. I was at Urban Planet looking for some inexpensive work clothes, all black and about to get covered in food/beer, when I spotted this jeans.

They are so fun and just a little bit wild, and marked down to $10....then 50% off! These are $5 jeans my friends! And on top of that I feel great I'm them! It's crazy how a pair of pants can make you feel like yourself after months of feeling not like yourself. I know you know what I'm talking about.

All in all it was a great night with friends and a great outfit to boot!

Welcome to 2013 everyone, or as some are calling it the year of the baker's dozen. I feel like it is going to be the year of awesome. Or maybe that's because I have decided it is going to be the year of awesome. Doors are going to open, things will change, and life is going to hit the ground running. The Minnie Mouse Controversy

I opened up my email this morning as I do every morning and was reading the one from Fashionista.com and found that there is a bit of controversy surrounding the Disney/Barneys Christmas collaboration  I hadn't seen the video that was being discussed yet and decided to watch it. Now before I explain the reason people are peeved to you, why not watch the video and see how it makes you feel?


It seems that people are worried about the fact that the Disney characters, while in a dream, become "model skinny". Here's my thoughts. 

One: In tons of the Disney movies, or even the skits I remember as a kid, things happen that are not real, or are physically impossible in real life. Shocker, because its NOT real life. These are cartoons. Allowed to do things that are impossible in the real world. This cartoon is not aimed at children  They won't even see it unless an adult, who knows it exist, shows them. Therefore it shouldn't matter that if for a moment there are "models" on a runway.

Two: Its a dream. In the end Minnie is Minnie and loved by Mickey for who she is. Also side note: Longest relationship ever! Props to those two! She gets the dress and rocks it as herself. Who of us has not had a daydream of being in a totally different world than our own. Maybe you daydream of being a rock star on a concert stage. Or a hockey player playing for a gold medal. Whatever yours is you know its a daydream.

Three: Leave it alone people. There are skinny people, and not skinny people. That is the way of the world. It happens. But mostly its a cartoon sketch that is fun to watch. Take it with a grain of salt and enjoy it for what it is. I mean how awesome is Goofy as a male model. Or Cruella de Vil, you know she would be all Naomi Campbell style as a model.

I think that sometimes people take things meant to be fun and harmless and attacked it instead of just enjoying. Sometimes a cartoon is just a cartoon. What do you think?

Toronto

I know I said I was back and then I disappeared for a bit. I was in Toronto with my boyfriend, Frazer, for his dad's wedding. I had planned to blog from there but to be honest I was too busy having too much fun! Here is the kicker...I had never been to Toronto before! Isn't that crazy? I have traveled the world, lived in Hong Kong and Tokyo, but had never been to Toronto. Well it was love at first sight! Don't get me wrong I love Vancouver but sometime for me it is too small. I needed a bit of bigger city living.

And I got it.

I don't know if I am the only one but before I leave I like to spread all of the clothes I plan on taking out on my bed and make sure I have outfits, not just pieces. I used to be a horrible over packer and I am trying to tame that with some planning. That being said I did take 7 pairs of shoes...for 6 days. (Side note: I wore all of them!) So maybe next time less shoes...




First night we checked in to the hotel and then grabbed some dinner before drinks in our little private lobby. This place was amazing.

Day two it was off to the spa for a day of pre wedding pampering with the bride and my boyfriend's sister. It was wonderful. I never go to the spa and let me tell you the massage was RELAXING!

After the spa it was off to city hall for the ceremony and then back to the hotel for a fabulous reception. Honestly it was an amazing wedding. The bride and groom look so happy and all the family and friends had a blast toasting the new couple. After dinner the whole thing moved over to a nightclub for some dancing and cocktails. We finally got home around 3:30 in the morning. Totally worth it.

The day after the wedding we moved out of the hotel and into the bride's apartment. They didn't need it anymore, they were off to Paris! But more importantly we met up with our friend, P!! She recently moved to Toronto for work and I love that she is chasing her dreams...making them happen really. The three of us got together had some drinks and a lot of laughs. It was a lot of fun!



We also went to a Raptors game Saturday night. Last time I went to a NBA game was when Vancouver had the Grizzles. So its been awhile. It was fun but the weird thing I noticed was almost no one was wearing a jersey, or the team colours and after having been to a few Canucks games I found it so strange. We have so many people in jersey and at least in the team colours at our games.





The next day we walked all over town and hit up the Kensington Market for some vintage shopping. I got a leather jacket, a badass tshirt with Heidi Klum giving the finger one it, and a dress. All for under $100! Love it!

The next day we hit up the ROM, Royal Ontario Museum. They were having a dinosaur exhibit and a fashion exhibit! I was stoked. Two of my favourite things!! I got a bunch of dinosaur photos but was unable to take any of the fashion, no camera allowed. Sorry. 







It was a great trip and I would love to again...and will go again. Watch out Toronto you haven't seen the last of me!!

The Hiatus is over!

Well I'm back...

Sorry I have been MIA for so long but sometimes you need a break. And I needed a break. I felt like all of my creative energy was gone, I had hit a wall. A huge throw me off my game wall. I was at a crossroads, still am, and I needed to just stop and let myself be. I stopped blogging, stopped reading blogs and just lived life. It was great but I missed my blog.

I realized that part of the problem was I had forgotten why I started my blog. I never started my blog to make money off it but when reading so many other blogs where it seems like they have endless funds and just get to blog was making me unhappy. I felt that I needed to keep up. It was like being back in high school and not being in the popular group.

Something that someone in their 30's shouldn't be worried about. I have my own friends, family and man. So why was I comparing myself to people who live nowhere near me and don't even know me? Because the world has become smaller and social media makes us feel the need to compete.

I started my blog as a creative outlet while I finished fashion school and searched for a job I would love. I have finished school and have had some jobs but I am struggling to find that job that lets me combine my creativeness, love of fashion and ability to live...aka a good salary. I have decided to no longer let myself feel the need to keep up. I don't make a lot of money and I can't be constantly trying to always be on top of every trend at top dollar. It's just not real life.

So I'm back. Frugal fashionistaing it up all the way, my way.

New Home Floor




Before my accident I had the pleasure of attending the unveiling of the redone home floor at The Bay. For those of you who haven't been there before or just can't remember what it used to look like let me just say it was DARK! Now the home floor has seen the light! It is bright with beautiful white walls that let all the decor take center stage. I, for one, was ready to move into one of the show bedrooms and call it a night.
